Orange Vanilla Chia Pudding

When living in LA you can’t get around Chia Seeds. They are virtually everywhere. I remember when a few years back my husband and I would not buy them when in Munich, because they were too expensive and hard to get by. A lot has changed since then and Chia Seeds are not only to be found in most stores, they also became affordable. However, it has taken me a very long time to prepare my first Chia Seed pudding at home. I’m usually feeling hesitant towards trends and prefer for the hype to slow down before I join the party. Chia Seeds are high in vitamins, protein, fiber, antioxidants and omega-3’s. Hence they make for a deliciously healthy breakfast that will provide you with a lot of energy to start the day. Red Beet Soup

After teaching evening classes I often come home late. Since eating a big meal before class isn`t an option I usually end up being pretty hungry by the time I make it back home. Since you don`t want to eat a big meal before going to bed neither, soups are a great way to nourish yourself without feeling stuffed or heavy. This red beet soup tastes great and its color brings pure joy ♡ Red Beet Soup ∼ Serves 4 ∼ 2 Onions 3 Medium sized red beet 2 Medium sized potatoes 2 Tablespoons butter 2 Lb vegetable broth 0,25 Lb cream 4 Teaspoons creamed horse raddish Salt Pepper Finely chopped chive Finely chop the onions. Peel the potatoes and red beet and cut into medium sized cubes. Sauté the onions, potatoes and red beet in butter on medium heat. Add the vegetable broth and bring to boil. White Smoothie

I`ve been down with a cold for three entire weeks now and my energy level is at its lowest. Subsequently I am craving sugar and comfort foods but don`t want to reach for the bad stuff. My solution: this super yummy white smoothie! It`s texture is divine, vicid and lubricating for the throat, yet completely vegan. Plus its sweetness comes solemnly from natural produce like dates. It`s a quick fix and rich enough to substitute breakfast. A real winner! White Smoothie ∼ 1 pint ∼ 1 Banana 1 Tablespoons raw coconut oil 2 Tablespoons coconut flakes 3 Tablespoons peeled hemp seeds 3 Dates A little plant based milk and water Cinnamon and / or vanilla to your liking Mix everything in a powerful food processor and enjoy ♡

One of my favorite recipes and the last one in my apple series is this velvety apple jam – with just the right amount of sweetness it melts on your tongue and makes every scone or croissant oh so exquisite. Apple Crumble

It`s this time of the year when all I want to do is curl up under cozy blankets and eat warm, comforting food. Thankfully, this weekend we were blessed with a few days of rain and since there are still some apples left from Colorado I made my mothers famous Apple Crumble ♡ Apple Crumble ∼ 6-8 portions ∼ For the filling: 600 gr. apples 100 gr. raisins 5 tablespoons brown sugar 2 teaspoons lemon juice 1/2 teaspoon ground cinnamon For the crumble: 100 gr. non-dairy butter 175 gr. whole wheat flour 100 gr. sugar 1/2 teaspoon ground cinnamon Mix the flour, sugar and cinnamon in a bowl and add the cold butter in small patches. Use your hands to knead the mixture into crumbles and store in a cool place. Preaheat the oven to 200 degrees. Rinse the raisins under hot water. Peel and cut the apples into thin slices and mix them with the sugar, lemon juice, cinnamon and raisins. Pour the mixture into a greased pan. Spread the crumbles over the mixture and …

Chunky Applesauce

In late summer, we spend two weeks at my mother-in-law`s Orchard in Colorado. It`s an old centennial farm surrounded by an apple and a pine tree plantation in a remote area nearby Telluride – an absolutely magical place! Since the apple business is no longer up and running, the trees were loaded with apples when we arrived and we tried to pick as many as we could while we were there. Three boxes filled with Jonathan, Red Delicious and Golden Delicious made it back to Los Angeles with us – roughly 100 pounds! – and since then it`s all about apples in our home. Even though we don`t really like to part with our apples – the apartment smells delicious since they are here! – we had to get creative about conserving our apples and making homemade applesauce has become a great way to keep them around a little longer 🙂 It`s a really fast and easy recipe, especially if you get a peeler/corer/slicer, which you can buy for very little money on amazon. Gazpacho

Another one of my all time favorite summer recipes. And even though we have oficially entered the season of fall, it continues to be hot here in L.A. so this Gazpacho still makes for a nice lunch or dinner. I usually have those ingredients at home so I can make it anytime without much preparation. It`s also really easy to make and if you have a lovely soul helping you with the chopping it won`t even take long. Gazpacho is originally from Seville, Spain where the summers get very hot. It`s a perfect dish that provides you with important nutritients, minerals and salt when you need to eat but it`s too hot for a warm meal. Try to use the best ingredients only and choose a fine olive oil that will give your Gazpacho a heavenly taste.
